Chocolate Vegan Cupcakes

Ingredients:
2 1/2 cups flour
2 teaspoons baking soda
1 cup sugar
2/3 cup cocoa
1/2 teaspoon salt
1 1/2 cup water
3/4 cup vegetable oil
6 tablespoons apple sauce
2 teaspoons vinegar {can substitute with lemon juice}
1 teaspoon vanilla
1/2 teaspoon salt

Directions:
Preheat oven to 375 degrees. Grease cupcake pan. In a large mixing bowl, whisk together the dry ingredients, then mix the remaining ingredients. Bake for 15 minutes at 375. Toothpick inserted in the center comes out clean. Recipe should yield 12 cupcakes.

* I know that many people are skeptical of vegan baked goods, but please put your skepticism aside and try it. You'll be pleasantly surprised.
